Kune Kune Chop & Steak Bundle | approx 1.5kg | £15

A selection of chops and steaks from two-year-old Kune Kune pigs raised on Gary's smallholding on the Roseland Peninsula — Jacob's cuts from the parts of the animal that didn't go into joints or sausages. Pieces run from 350–600g each, with good fat coverage.

The meat is darker than any commercial chop you've bought. The fat is more developed. Both of those things are why it tastes better — and why it needs cooking differently. Don't grill these and expect a quick dinner. Jacob's recommendation is slow cooking: a covered dish or pan, a splash of stock or cider, 150°C for 90 minutes to two hours. The fat renders into the liquid, the meat stays tender, and the flavour that two years of proper rearing built into this pork comes through completely. Finish under a hot grill for five minutes at the end if you want colour on top.

Some cuts carry more fat than others — where they do, we include extra weight so you're always getting a good amount of eating. Each bundle is around 1.5kg or more. Member price: £15 per bundle. Going public at a higher price. Frozen. One-off batch.
