One whole Kune Kune pig went into these sausages. Not offcuts, not trim — the whole animal, properly butchered by Jacob, a local chef who makes sausages the way a chef does rather than a factory. The waste was discarded. What's left is 35kg of sausage from one pig, and it shows.
Kune Kune are a traditional heritage breed. These were two years old — more than three times the age of a supermarket pig — raised on Gary's smallholding on the Roseland Peninsula before spending their final weeks here at Grassroots Garden. The meat is darker and richer than standard pork, with proper depth of flavour that only comes from slow growth and a real life outdoors.
Jacob has seasoned each batch himself. He's a chef who takes this seriously, and the recipes reflect that. You'll get what's available — every pack is good.
Each sausage weighs around 130g. A standard supermarket sausage is 50–60g. Six per pack, 750–850g total — double the weight of a standard six-pack because every sausage is twice the size. Cook low and slow over a medium-low heat for 20–25 minutes. They're packed properly and they need the time.
